Seriously! I need one. Been doing a little more redesigning around here as you may have noticed. The last theme was pretty but not coded very well so Mike switched me to this one. Kinda plain but VERY customizable assuming I actually had the time to do it. Progress, progress…

Weekend?

Weekend, oh weekend, where have you gone? Saturday was pretty good with a trip to the farmer’s market, Halloween festivities at Old Navy and having the fam over for a big homemade dinner… But today, the stomach flu for all of us? REALLY? Poor Nick has it the worst and has been barfing all day. It makes me sad.

Since this nastiness hasn’t given me much blog-worthy writing I decided to post a recipe. I made this last night for dessert and it was delish. Always is. It is a recipe that has evolved for me over the last many years and is always one of my favorites. You can use apples, peaches, blueberries, and/or any other fruit you enjoy. You can vary the amounts of almost any ingredient in this recipe and you really won’t mess it up, it turns out fabulously no matter what you do. I always make a double batch of the topping. Yum.

Warm Apple Crisp

8 apples, peeled, cored and sliced

2T lemon juice

1/3 cup water or apple juice

3T sugar

3T flour

1t cinnamon

Pour the lemon juice and water into a 9×13″ baking dish. Add the apple slices and mix. Add the sugar, flour and cinnamon and stir to coat. Press down into pan.

1 cup oats

1/2 cup flour

1/3 cup wheat germ (you can omit this no prob but fiber’s good for ya!)

1/2t salt

2t cinnamon

1/2 cup brown sugar

1/2 cup butter, softened

2/3 cup pecan pieces (optional — I don’t put them in)

Mix all the dry ingredients together in a bowl. Rub in the butter until pretty evenly mixed. Sprinkle over the top of the apple mixture. Bake 375 degrees until browned (about 25 minutes). Enjoy with vanilla ice cream or homemade whip cream.

If I can’t slip her a little rum then maybe I should have some?

Zoey decided to get up at 4:30 am today. Actually for the past couple weeks she’s been thinking 4:30 was good but was reasonable when asked to go back to sleep and would give us another hour. For those of you not gifted in the math department that means she’s been waking us up every day at 5:30am.

So today it was 4:30am solid. She was NOT INTERESTED in going back to sleep no matter how much I rubbed her back, begged, gave her stern warnings… it didn’t matter. At one point she shouted “WANNA GET DOWN!” Subtelty is not this one’s strong suit. Apparently neither is sleeping.

Right now we are desperately trying to get her to nap. She seems to think she doesn’t need to today. Unfortunately this is a battle we can’t win no matter what we do. I will be sooooooo excited when this whole 18-month sleep regression nonsense is over.
